Pea shoots are a delicious and versatile microgreen that are ready for harvest in only about 10-12 days. Their nutritional benefits include Vitamins A, C, E, B1, B2, B3, B6, Protein, Fiber, and Omega-3. They are also known to aid in diabetes, cancer prevention, inflammation, and overall heart health!
The pea shoots that we grow at PVX are organic speckled peas, and they go fantastic on sandwiches, salads, in stir frys, or as a garnish as they are crunchy, fresh, & succulent.
Amaranth is an incredible little microgreen, which can actually be better considered as an edible flower or ancient grain, first cultivated by the Aztecs. In the micro size, these shoots are densely nutritious with Vitamins K, E, & C, as well as protein, calcium, iron, and beta-carotenes. It is known to aid in cancer treatment, cardiovascular disease, hypertension, boost immune system strength, and decrease hair loss and greying. On top of all these benefits Amaranth's strong flavor is similar to delicious beets and its striking colors can add lovely depth to any dish.
It is best recommended to apply raw to your dish as their delicate nature can't withstand high heat. Some great paring can include piled over pasta, fish, in sandwiches, over quinoa, mixed into salads, or with flavors such as green apples, blood oranges, carrots, bell peppers, and onions. YUM!
